近年国内餐饮业发展迅速,然而,在门店数量规模、产品标准化和品牌塑造等方面,中国餐饮企业相较于国外发达国家仍处于落后状态。尽管我国连锁餐饮企业数量增长呈上升趋势,但是服务质量不稳定、区域布局不合理等问题仍然存在。跨国餐饮连锁企业能在全球范围快速扩张并且占领国际市场,除了先进经营理念的支撑之外,高效的物流运作与供应链管理系统为其正常高效运转提供了充分保障。本文通过分析跨国先进餐饮连锁企业的物流运作与供应链管理,研究中国餐饮业发展对策与模式,以期为中国餐饮企业转型升级提供参考。
Abstract:In recent years, the Chinese domestic catering industry has developed rapidly. However, the Chinese catering enterprises are still lagging in terms of scale, standardization, and brand building compared with the catering enterprises in developed countries. Although the number of catering enterprises in China is on the rise, problems such as unstable quality and unreasonable regional layout still exist. International catering chain enterprises have expanded rapidly around the world and occupied the international market with the support of modern management methods, efficient logistics operations, and supply chain management systems. This study examines the development countermeasures and models of the Chinese catering industry to provide reference for the transformation and upgrading of Chinese catering enterprises by analyzing the logistics operations and supply chain management of leading international catering chain enterprises.
